Yeah....I like this book. I made the brioche dough and it made the best dinner rolls I've ever made, and enough left to make raisin bread for the morning. I may not make the take-forever dough types like croissants but I want to try the puff pastry and the "rough" puff pastry. I really like the idea of teaching us that there are not just one recipe after another, but whole different families of baked goods types. I also like the flour issue: that using non-bread flour may the solution to tough dough. Van Kraayenburg mixes cake flour with bread flour! Whoever thought of that?? But I substituted Honeyville pie and pastry flour (a soft, low protein flour) since he was going soft flour, and it worked great. Gives me to think --- I'm going to try out these different grades of flour since I have them anyway. The point of this book is not the recipes so much as the fact that there are different types of dough, a very useful concept.

I've now spent quite a bit of time with this book. I wish the recipes were in grams as well as ounces, but it isn't hard to convert them. I have not been thrilled with the actual recipes -- they seem a little uninspired to me, for the most part -- but this book is really about technique and the chemistry/physics behind the various doughs, and it does an excellent job there. It's not the kind of book you buy for recipes, but rather a book to help explain in a more thorough manner the doughs we use. The format can seem a little cumbersome, because he will describe the dough and then later add recipes, so you kind of have to flip back and forth, but he makes it easy, always giving page numbers, and the format he used is really the only solution for what he is trying to accomplish. It would be even more cumbersome to do it any other way. My only real complaint of substance is that he could have gone one step further in his discussion. For example, he could have told his readers what happens if you roll the croissant dough out thinner, what are the symptoms of pate sablee that has been rolled out too many times, that sort of thing. He tells you how to do it either his way or the "right/traditional" way, but he doesn't go into variations and what results from them, and I know he could have done this. But this is a great book for someone who bakes often and wants to expand their repertoire or wants a better understanding of what is going on with dough. If you are a baker, the book is well worth the price and the space it will take up on your shelf. It has improved my baking and I am grateful to the author for perceiving that a book like this was needed, and writing one.

I'm giving this 2.5 stars. I like it JUST well enough to keep it, but no more. Before you get too excited by the rave reviews for this book, notice most of the customers have not actually USED it yet. I already notice several problems in the recipes which I've read carefully (thought I haven't baked with it yet either), for example baking powder confused with baking soda, missing information on sizing gougeres, poor graphic conception that (the pie chart adds nothing, read Edward Tufte for a lesson in better graphic design of information). And what's with the mixing of cake flour with bread flour to get all-purpose flour? Who does that? Cake flour is less readily available and more expensive. I'm going to keep this book but I'm going to need to check every single recipe against other sources to be sure there are no other big errors. These recipes clearly haven't been tested. It's too bad because the concept is really nice, it fills a need, and is just what I've been looking for as a follow-on to binge-watching GBBS. I like the cover, too, and the book is inviting.

As an amateur Baker this book is a godsend. Unlike so many books it explains why you prepare dough instead of just how. The recipes are given in proportions so you can scale up or down as needed.

I love this book, & I’ve owned it less than a week. I actually haven’t baked from it, but with my experience I can easily say that I believe it will be amazing. I have quite a few ‘bucket list’ items to cross off, starting on page 159.

I bought this book without and recommendations and thought I'd quickly flip through. I was so surprised to see how absolutely amazing the recipe's rips and photos were. I would highly recommend this book. The price is extremely reasonable for the quality of the content.

Loved it!!! My girlfriend and I have made several of the rscipes in here including begniets and poptarts and they are abaolutely fantastic!

A fascinating story that I would never have thought about. Book was in very good condition.

#3,342,800 in Books (See Top 100 in Books)

I'm working through this book as I work to transition from PHP development to Rails with Ajax. I'm starting a new project from scratch and wanted to take on this "newish" methodology that is supposed to make my development more fun and way faster.Well I bought the book a year ago when I was thinking the same thing. But I didn't find the time to invest in a new language until now.Unfortunately Rails 2.0 has been out for a while and this book is written to 1.2 or something. Prototype is also in version 2.x and the book was written to something like 1.5And that doesn't even mention that there are much different ways to get Ruby and Rails installed now.So far I've spent a few days just making Rails work at all on my XP computer. It turns out that there is now a package called InstantRails that you just unzip and run in place. So I wasted those days trying to track down the components described in this book to no avail. Now that I'm working with the code, I'm finding that the examples simply don't work in about half the cases due to the deprecated functions and new naming conventions and so on. It's like learning how it was done two years ago along with how it is done now. And it's really slowing me down.Every time something doesn't work, instead of learning the lesson intended by the book, I spend a lot more time learning how to troubleshoot the problem until I find the new correct way of doing the same thing. So I can't say that I'm not learning from this book. I'm learning a lot. It just that I'm learning by correcting errors on my own instead of by clear examples that work. It's kind of painful and slow. The book seems to be good other than that. My only complaint is that some of the terms used aren't clearly explained early on. But I think most programmers can get past those and just keep reading and be fine.I just don't recommend buying this book anymore. If there's an updated version to cover the current versions of the applications, that might be worth getting.

This is a great book to get. The author is an expert in the field - I've seen him speak in person, and read his articles in the past. The book does not disappoint. It's really three books in one. The first part is a tutorial, taking you through the paces and up the ladder of frameworks. You go from JavaScript to Prototype to Scriptaculous to RJS, chapter by chapter, and it really makes sense. Then you get chapters on Usability, Performance, Testing, and Security, which really cover more than just the basics - Mr. Raymond shows you how to build your application around Ajax, and do it intelligently. The chapter on Performance had a better explanation of caching than I'd read anywhere else! The second part is two chapters, two comprehensive references on Prototype and Scriptaculous, respectively. Combined, these might be worth the price of the book for some folks. I'm sure I'll be referring to these pages for some time. Finally, you have three real-world application examples. Again, these might be worth the price of the book as well! You get a Review Quiz, Photo Gallery, and Intranet Workgroup application. The code is available at the O'Reilly site now, so you don't have to type them in, of course. Still, it's nice to read about them in the book, and why the author wrote them the way he did. All of the applications are useful, and use best-practices throughout. It's nice to see O'Reilly starting to get their Rails titles out. Predictably, they're awesome. They always choose the best authors, edit and proof the books meticulously, and put out a quality product. Highly recommended.

I bought this book thinking I would learn a lot. I've done very little JavaScript and Ajax before so I was expecting to soak this up like a sponge. I did the examples and read through the book and felt like I got a great introduction to using Ajax with Rails. That's the problem though, I feel like the book needs more meat, especially in the RJS section. Now that I have a good foundation, I'm looking elsewhere for more intermediate concepts that should've been part of this text.

But maybe the third book. The book is good for learning more about programming Rails. You need to read something else if you are just starting in Rails. For those of you who are alreadying doing rails this adds a few more arrows to the programming quiver. It does not have a bunch of information as it is a thin book. The information it does provide is worth the cost of the book. I always just my professional books as to how much money they would save me and this book has saved me money. It is worth about 40-80 hours Internet searching and trial & error work.It has explainations of scrip.aculo.us packages. It does have a good set of features that I find useful in a good collection. For those of you familiar with O'Reilly books of the past, this book can be a little hard to read like the books of 10 years ago. Needs a little better editing.A good book on Rails, just not a good starting book.

Bought the book using saturday shipping. Continuesly read for 5 hours to finish the first 9 chapters. It is not a beginner's ruby on rails book. You definitely need the official ROR book first. But this one covers ROR Ajax in great detail.A must have book for whoever wants to bring Ajax into their rails development.

I was really prepared to like this book but about 1/3 the way into it I began to have nagging doubts about the authenticity of these individual accounts. Each chapter is an interview with a different German soldier, each who was stationed on one of the Normandy beaches invaded by the Allies on D-Day.The accounts are interesting but do not ring true. There are too many similarities between accounts and much fine detail that would have been impossible to recognize - for instance, the detailed description of a ricocheting shell in a closed bunker that lasted for a fraction of a second by a soldier who was not inside the bunker and in a state of near panic. Some of the descriptions are gruesome but I don't beleive for one minute that anyone in a bunker where a phosphorous charge expoded would live through it never mind be able to describe it in fine detail afterwards. It's all pretty doubtful stuff and there's a lot of it.I wouldn't take any of this book as history though I'm sure there's plenty of truth in some of the accounts but it's impossible to tell where it is.I read this book through Amazon's Prime Reading program.

My original review was 5 Stars (below), I changed it to one star because this book is most likely fake. If something seems too good to be true, then it probably is. That was the case with this book. I devoured the first book and wrote the 5 star review prior to reading the second book. The second book's Typhoon bomb anecdote seemed too far fetched. That's when I researched this book and found numerous website discussions challenging this book's authenticity. One historian's search was unable to find any trace of the author's grandfather having worked at the German publications mentioned therein. So far, I haven't found any defense from the book's author. This book's author must come forward and defend the book and the anecdotes therein. I believe there are two sides to every story and I will keep an open mind. Please address this issue. My original 5 Star Review"I have never read a book like this before. The personal anecdotes are descriptive and chilling. This book is highly recommended for WWII readers."

What I find fantastic about this book is that it almost entirely composed of primary source material--direct interviews with German survivors of the D-Day invasion by the Allies. The format is clear and organized. Each soldier is briefly described or introduced, and then follows a series of questions and answers. I am guessing that the editor of the book selected the best interviews from the records compiled by the interviewer, his father, a German war correspondent. But that is only a guess. I write this because each account is so informative and clearly constructed, a miniature masterpiece of memory of the events of June 6, 1944 at a particular point in the momentous battle raging on a much larger scale. The questions and answers are mostly direct and unvarnished, giving us honest insight into not only the experiences of typical German soldiers, but their attitudes and beliefs as well. The author provides the briefest of commentary at the end, refreshing as well. We get and are bombarded by plenty of opinions and interpretations of history. It was a relief to be left alone to ponder these soldiers' accounts for oneself. Some particular points that stood out to me: I was surprised by how some writers were themselves surprised by the ferocity, anger and hatred of the Allied soldiers they encountered in battle. This struck me as both naive and ignorant, but I also realize I can only dimly imagine how their perspective was shaped by the German political and cultural experience. They also mentioned how they viewed their mission as defending Europe as part of a broader pan-European coalition against Communism, international corporations and finance, etc. Reference was made more than once to non-German personnel serving as part of the German forces. The execution of Allied soldiers by SS troops in particular was familiar to me from reading about the Battle of the Bulge and the Russian front, but it sounds like it was quite widespread based on these D-Day accounts. The inclusion of this point, very unfavorable to the German cause, deepens my respect for the trustworthiness of these interviews. Finally, the detailed descriptions of the gruesomeness of World War II combat is another example of the work's authenticity and accuracy. For those interested in World War II and honest history, I highly recommend this book.

And then began the battleship bombardment, shells large enough to see coming in, that leave their bunkers cracked and broken and men deaf and bleeding from the eyes. When allied numbers overwhelm it becomes hand to hand for survival. All believe reinforcements are imminent and that few prisoners would be taken. Another soldier in a guard position away from the beach realizes an attack is on when in the night his partner is killed paratroopers. A third soldier survives a tank flamethrower attack on his bunker. The author interviewed men at all 5 beaches prior to the invasion. He finds survivors and interviews them when they are about 30 years old, the memories are horrible in their detail. Each beach is a chapter. Many of the soldiers serve here as a result of wounds in Russia or infirm conditions like asthma. After regaining consciousness later in the morning, one soldier finds himself in a wire enclosure with fellow Germans being treated by an allied medic. In low whispers the prisoners discuss the beach spectacle. “Defective equipment is pushed aside with no attempt at repairs. Where are the horses? Can fuel be so plentiful that there is no need for horses? If that is so, our war is lost.” Wow. My best vacation read this year. Highest recommendations.
